Bolted Stone Ground Organic Durum Flour – 10 and 50 lb bags
About bolted flour: Bolted (or high-extraction) flour is whole grain flour with some percentage of the bran sifted out, which makes it a nice compromise between hearty 100% whole grain and all purpose white flour. It’s ideal for when you want a lighter loaf or dough yet wish to retain the high nutrition found in the germ of the wheat berry.
Durum is the hardest of all wheats. Its density, combined with its high protein content and gluten strength, make durum the wheat of choice for producing premium pasta products. When combined with all purpose or bread flour, it’s also a key ingredient in some “Italian Style” breads like our awesome Sicilian No Knead Bread, or a crispy pizza crust.
Milled Fresh — Our durum flour is milled fresh upon order. We use granite stone mills and mill at low temperature within a day or two of shipping. Your flour arrives as fresh as possible, retaining maximum nutritional value and flavor.
Our Durum is supplied by Montana Flour & Grains who have built their reputation on quality and service. Their grain is grown by more than 150 family-owned and operated farms. They are committed to ideals of sustainable stewardship of our natural resources for those of future generations.
Montana Flour & Grain is also sole U.S. agent for KAMUT® brand grain, an heirloom spring wheat with “ancient” origins. We provide grower support and work to establish a consistent supply of this unique grain.
Durum wheat is the only tetraploid species of wheat of commercial importance that is widely cultivated today (tetraploid wheat has 28 chromosomes, unlike hard red winter and hard red spring wheats, which are hexaploid and have 42 chromosomes each). Durum was selected from domesticated emmer wheat strains formerly grown in Central Europe and the Near East around 7000 B.C.
Durum in Latin means “hard”, and the species is the hardest of all wheats. Its high protein content, as well as its strength, make durum good for special uses, the most well-known being pasta which in Italy is exclusively made from durum wheat. Durum wheat is used extensively in breadmaking. However, it is unusual in that, despite very high protein content, it is low in desirable gluten needed to form a glutinous web necessary for bread to rise. As a result, although 100 percent durum wheat breads do exist, such as pagnotte di Enna from Sicily, as well as others, in most instances bread doughs contain only a portion of durum wheat and are supplemented substantially with commercial white flours, oftentimes those higher in gluten necessary to offset the poor gluten contribution of durum flour. When durum flour is used as the sole flour in bread, substantial additions of isolated wheat gluten are necessary to effect rising. Without it, 100 percent durum wheat breads are often heavy, with very close grain, and will split easily when risen for baking.

You will receive a confirmation email shortly after placing an order. This confirmation email verifies we have gotten your order request and pre-approved your credit card.
After your credit card is pre-approved, we contact our suppliers to ensure that your items are in-stock and available for immediate shipment. If the product(s) you ordered is unavailable, we will void the credit card pre-approval and contact you via phone or email. If the product(s) you ordered are available for quick shipment (inside five business days), we will process the pre-approved credit card charges and prepare the order for delivery.
ORDER SHIPMENT
You will receive confirmation within 48 hours of your order's departure from the distribution center. If you do not receive the following information within six business days of your order, please email contact@firewalkerovens.com. Most orders ship via freight carriers and delivery times are estimates. We can't verbally guarantee a particular date, but we will do our absolute best to expedite your order. Outside variables, such as climate, location, current events, and conditions may affect delivery.
CANCELLATIONS, REFUNDS AND RETURNS
We want you to be satisfied with your order. Orders may be canceled at no cost before shipment. Orders canceled after shipment will be charged a 15% restocking fee and shipping charges, including return shipping. Refunds will be processed once the product(s) has been received and inspected at the distribution center. Since we can't sell used or damaged items, all returns must be in new and unused condition, including all packaging.
All returns require authorization.
Refunds will be issued to the credit card that was used to place the order.
Our Returns Policy is valid for 30 days. If 30 days have passed since your delivery date, unfortunately we can’t offer you a refund or exchange.
SHIPPING INSURANCE
Firewalker Ovens provides complimentary delivery insurance with all orders; we want your product(s) to be safe during transportation. By accepting an obviously damaged box and marking for it in "satisfactory condition," you accept your order "AS-IS" and decline future refunds or substitutions. Any container that appears damaged on the outside will likely contain a damaged product inside. You must immediately record cargo claims with the freight company and Firewalker Ovens.
DAMAGES
Please examine your order and ensure items were not damaged during transportation. If your order arrives damaged, please reject the delivery, take note of the damage and send photos to contact@firewalkerovens.com so we can prepare an insurance claim. By accepting a damaged parcel, you void our ability to claim insurance or authorize refunds. Kindly DO NOT sign for a case/container that shows evidence of severe damage.
DELIVERY
All freight shipments will be delivered "curbside" at the end of your driveway or street. Curbside delivery does not include set-up, assembly, or removal of packing materials. Please contact us for alternate delivery options.
We deliver to physical street addresses in the lower 48. P.O. box delivery is not available.
An adult must be available to sign for the delivery.
